Ingredients:
1.5 lbs sirloin steak
2 tbsp olive oil
salt and pepper
4 cloves garlic, minced
1/4 cup butter
2 lbs red potatoes, quartered
1/4 cup chopped fresh parsley
Instructions:
Season the steak with salt and pepper. Heat the olive oil in a large skillet over medium-high heat. Add the steak and cook for 3-5 minutes on each side, or until the desired level of doneness is reached. Remove the steak from the skillet and set aside.
In the same skillet, melt the butter over medium heat. Add the minced garlic and cook for 1 minute, or until fragrant.
Add the quartered potatoes to the skillet and season with salt and pepper. Cook for 10-12 minutes, or until the potatoes are tender and starting to brown.
Slice the steak against the grain into thin strips. Add the sliced steak and chopped parsley to the skillet with the potatoes. Stir everything together and cook for an additional 1-2 minutes, or until the steak is heated through.
Serve the steak and potatoes hot, garnished with additional chopped parsley if desired.
