Ground your 2 lbs meat and drain out the bad grease
Add 1 can of corn, or frozen corn, or fresh corn. It’s up to you.
Then add 1 teaspoon comino
2 garlic cloves minced
Caldo de Tomate to your taste
whatever amount you desire.
I use a quarter of a medium yellow onion
1 medium Roma tomato
1 large Jalapeño with ends cut off . 1 tspn of black pepper
Add Canola oil, or whichever you prefer
Let it fry a bit
Then add 1 to 2 tablespoons of flour. When flour has browned add water to get to consistency you want . About a cup and a half.
Then add 1/4 cup of tomatoe sauce, Or the one I prefer,
2 tbspns of tomato paste dissolved in water then add it to your dish.
Your gonna simmer it till you see it all come together.
I simmer for about 20-30 minutes. I want my flavors to marry well. I dont like it to thick. I like it just like the picture shows.
Do not add salt cuz we all know that Caldo de tomato is enough.
I make refried beans on the side with homemade flour tortillas!!
