*Ingredients

1 tablespoon olive oil
° 1 small onion, diced
° ½ red bell pepper, chopped
° 1 pound ground beef
° 1 t minced garlic
° 1 t chili powder
° ¼ t cayenne pepper
° salt also ground black pepper
° ½ c frozen corn
° 1 c Mexican cheese blend, divided
° 1 c salsa
° 1 c cornmeal
° ¾ teaspoon of salt
° ½ teaspoon baking soda
° 1 cup milk
° 2 beaten eggs

*Step by step

Preheat oven 425 degrees F (220 degrees C).
Heat olive oil in a skillet on medium-high heat. Add onion and red pepper; sauté until softened, 5 to 7 minutes. Adding ground beef, garlic, chili powder, cayenne pepper, salt also black pepper. Cook, stirring, until beef is browned and crumbly, 5 to 7 minutes.
Stir corn into beef mixture and stir to thaw, about 3 minutes. Drain and discard the fat. Add about 1/4 of the grated Mexican cheese mixture and mix well. Pour the meat sauce into a 9 x 13 inch casserole dish. Cover the meat with a thin layer of salsa.
Mixing cornmeal, salt and baking soda in bowl. Adding milk and eggs; stir to well blended. Spoon cornmeal mixture over salsa layer and top with remaining shredded Mexican cheese mixture.
Bake in preheated oven until top is golden brown, about 30 minutes
