Key Lime No-Bake Cheesecake
Bright, creamy and dangerously easy — this Key Lime No-Bake Cheesecake gives you tangy lime flavor without turning on the oven. Perfect for warm days and party menus where you want a beautiful dessert with minimal fuss.
Ingredients
- Crust
- 200 g graham cracker crumbs (or digestive biscuits)
- 100 g unsalted butter, melted (about 7 tbsp)
- Filling
- 400 g cream cheese, room temperature (about 14 oz)
- 200 ml heavy cream, cold (3/4 cup + 1 tbsp)
- 100 g powdered sugar, sifted (1/2 cup)
- 1 can (400 g / 14 oz) sweetened condensed milk
- 120 ml fresh key lime juice (1/2 cup) — or regular lime juice
- 1 tsp lime zest (optional)
- Pinch of salt
Directions
- Prepare crust: Mix graham crumbs and melted butter until combined. Press firmly into a 20–23 cm (8–9 in) springform pan. Chill 10–15 minutes.
- Beat cream cheese: In a bowl, beat cream cheese until smooth and creamy (2–3 minutes).
- Mix condensed milk & lime: Add condensed milk and pinch of salt; beat until smooth. Add lime juice (mixture will thicken slightly) and lime zest.
- Whip cream: Whip cold heavy cream to soft peaks. Fold whipped cream gently into the cream-cheese mixture until homogenous and airy.
- Assemble: Pour filling into cooled crust, smooth top, and refrigerate at least 4 hours or overnight to set. For easier slicing, freeze 30–60 minutes before serving.
- Serve: Garnish with lime zest, thin lime slices, or a dollop of whipped cream. Slice with a warm knife for neat pieces.
Notes & Tips
- Key limes vs regular limes: Key limes are more aromatic and tart; use regular limes if unavailable — the flavor will still be excellent.
- Sweeter or tangier? Adjust condensed milk or lime juice to taste; add a little more condensed milk if you prefer sweeter.
- Make-ahead: Cheesecake keeps well in the fridge for 3–4 days (cover). Freeze for up to 1 month.
- Crust swaps: Use crushed shortbread or Oreo crumbs (omit extra sugar) for a different base.
