MEXICAN PICADILLO: A SIMPLE, SATISFYING MEAL

INGREDIENTS
1 lb ground beef
1 small onion, diced
2 large potatoes, peeled.
2 large carrots, peeled.
4 cloves garlic
1 (8 oz) can of tomato sauce
1 ½ cups beef stock
1 teaspoon cumin
½ teaspoon oregano
1 bay leaf
½ cup frozen Peas
To taste: Kosher salt, freshly ground black pepper
Serve rice or tortillas
INSTRUCTIONS
Add ground beef to a large skillet and heat on medium heat. Season with salt, and pepper, and cook until the beef is just pink.

Add onions, potatoes, and carrots. Continue to cook until vegetables become soft and the meat is tender. Continue to cook for 30 seconds.

Stir in tomato sauce, beef broth, and bay leaf. Stir in cumin, oregano, and bay leaf, and bring to a simmer. Cover and cook for 10 minutes.

Cover the pot and stir in the peas. Continue cooking covered until potatoes are tender.

Serve with tortillas and rice, and enjoy!
