MEXICAN STUFFED SHELLS

These heavenly treats will surely make your day extra special! This recipe is a must-try, I’m telling you! Lunch or dinner will be awesome again with these Mexican Stuffed Shells. By the way, be very generous with the amount of cheese that you are going to add. Just do it and thank me later. Enjoy!

Ingredients:

1 lb ground beef (or ground turkey)

1 package low-sodium taco seasoning

4 oz cream cheese

20 jumbo pasta shells (about 6 ounces)

1 1/2 c salsa

1 c taco sauce

1 c cheddar cheese (or just use all of one kind of cheese)

1 c Monterrey jack cheese

For the Toppings:

3 green onions

Sour cream

Directions:

Prepare the oven and preheat to 175 degrees C or 350 degrees F.

Place a pan on the stove and turn the heat to medium.

Add the ground beef and cook until brown.

Add the taco seasoning and stir until well mixed.

Add the cream cheese and stir until well blended.

Remove from the heat and allow it to cool at room temperature.

Refer to the directions provided on the package of the pasta shells on how to cook them. Drain and rinse with cold water.

Arrange the shells in a single layer onto a baking sheet.

Spread salsa into a 9×13-inch baking dish.

Stuff with 2 tbsp of the meat mixture in each shell.

Arrange them into the prepared baking dish facing upwards.

Spread the taco sauce over the shells.

Cover them with aluminium foil.

Place the stuffed shells inside the preheated oven and bake for about 20 minutes.

Sprinkle the shredded cheese over the taco shells, then bake them for another 5 minutes or until the cheese has melted completely.

Remove from the oven and garnish with green onions.

Serve and enjoy!

Note:

I like to serve these stuff shells with more salsa or sour cream.
