This casserole has been my go-to and favorite breakfast. This is also excellent for overnight guests. This casserole is incredibly easy and quick to make. Made with frozen hash browns, sausage, eggs, and cheese. You can also prep this ahead of time and keep it in the fridge or freezer until ready to bake. Or bake right away, let the casserole cool completely, cover, and freeze.

This Sausage-Hash Brown Breakfast Casserole is a great option for busy days or hectic Christmas mornings. Prep this casserole the night before, pop it in the oven the next day, and you are all set!

8 eggs

2 pounds of hot breakfast sausage

1 (30-32 ounces) bag of frozen shredded hash browns

¼ teaspoon onion powder

¼ teaspoon garlic powder

2 c. shredded cheddar cheese

2 c. milk

1 teaspoon salt

½ teaspoon pepper

Step 1: Prepare the oven. Preheat it to 350 degrees F. Using cooking spray, lightly grease a 9 x 13-inch pan.

Step 2: Cook the sausage in a large skillet until brown. Then, drain the excess grease and set the sausage aside.

Step 3: In the same skillet, cook the has browns until light brown. If needed, add a little amount of oil. In the bottom of the prepared pan, transfer the hash browns and place the sausage and cheese on top.

Step 4: Combine the eggs, salt, pepper, garlic powder, onion powder, and milk until well blended, then pour this over the brown mixture.

Step 5: At this point, you can cover the casserole and store it in the fridge until ready to bake. Or if serving right away, place in the preheated oven and bake for about 30 to 40 minutes, uncovered.

For this recipe, you can use turkey sausage.

Add a couple of minutes to the baking time if baking the casserole after refrigerating.

Thaw the casserole completely after freezing, then tent it with aluminum foil and reheat for about 30 to 40 minutes at 350 degrees until warm.
