THE RITZ CARLTON LEMON POUND CAKE

Ingredients

1 tablespoon baking powder

3 c. sugar

3 c. all-purpose flour

1 c. unsalted butter, room temperature

1 c. whole milk

5 large eggs

6 tablespoons lemon juice

1 lemon, zested

½ c. shortening, room temperature

¾ teaspoon salt

HOW TO MAKE RITZ CARLTON LEMON POUND CAKE
Step 1: Prepare the oven. Preheat it to 350 degrees F. Ready a 15-cup Bundt pan. Spray o butter, then flour.

Step 2: Into a medium bowl, sift the flour, baking powder, and salt. Set aside.

Step 3: Cream the butter, shortening, and sugar using an electric mixer. Then, add the eggs one by one, beating every after each addition.

Step 4: In three additions, add the dry ingredients to the butter mixture, alternately with milk and starting and ending with the flour mixture. Beat at low speed until just combined. Next, stir in the lemon juice and zest.

Step 5: Into the prepared pan, pour the batter. Place in the preheated oven and bake for about 55 minutes or until a tester inserted into the middle of the cake comes out clean.

Step 6: Remove from the oven when done and let the cake cool for about 15 minutes in the pan before turning it out onto racks to fully cool.

Notes:

Make sure not to fill the pans to the very top to prevent the cake from overflowing.

For this recipe, I use a 15-cup Bundt pan. But you can also use a Tube pan.

Ensure to leave at least 1-inch to 1 ½-inch unfilled space if using a 12 or 10-cup Bundt Pan.
