Ingredients

For the dough

  • 2 cups All-purpose flour The backbone of our flaky pie dough.
  • ½ cup Unsalted butter, cold and cubed Cold butter helps make that perfect, tender crust.
  • ¼ cup Sugar A hint in the dough.
  • ¼ teaspoon Salt Just a touch to bring out all the flavors.
  • 5-6 tablespoons Ice water Keeps the dough tender without becoming sticky.

For the filling

  • 2-3 cups Apples, peeled and diced A mix of sweet and tart apple varieties like Honeycrisp and Granny Smith.
  • ½ cup Sugar For the apple filling.
  • 1 teaspoon Cinnamon For that cozy, spiced apple pie aroma.
  • 1 tablespoon Lemon juice Brightens the apple filling and keeps apples from browning.
  • 1 each Egg, beaten For brushing on top, giving you that glorious golden-brown finish.

Instructions

Preparation

  • Preheat your oven to 375°F (or set your air fryer to 350°F).
  • In a large bowl, combine flour, ¼ cup sugar, and salt.
  • Add cold, cubed butter and mix until it looks like coarse crumbs.
  • Sprinkle in ice water one tablespoon at a time, mixing until the dough just comes together.
  • Shape the dough into a disk, wrap in plastic, and chill for at least 15 minutes.
  • On a floured surface, roll out the dough to about ⅛-inch thick.
  • Use a large biscuit cutter or rim of a glass to cut out circles.
  • In another bowl, toss together diced apples, ½ cup sugar, cinnamon, and lemon juice.
  • Place a heaping spoonful of apple filling on half of each dough circle, then fold to create a half-moon shape.
  • Press edges with a fork to seal and brush tops with beaten egg.

Baking

  • Place hand pies on a parchment-lined baking sheet or air fryer basket.
  • Bake for 20-25 minutes (or air fry for 10-15 minutes) until puffed and golden.
  • Let them cool slightly before serving.

Notes

Serve warm, topped with vanilla ice cream or caramel. Store in an airtight container at room temp for 2 days or in the fridge for 4-5 days. They can be frozen for up to a month.
