Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, salsa, cumin, and chili powder. Mix well until all ingredients are coated in the salsa.
- Place a tortilla on a flat surface and spoon a portion of the mixture (about 1/4 of the filling) into the center.
- Sprinkle some cheese on top, fold the sides over the filling, and then roll it up tightly to enclose all the flavors.
- Repeat with the remaining tortillas and filling.
- Place the burritos seam-side down in a greased baking dish.
- Brush the tops with olive oil and sprinkle with additional cheese if desired.
Cooking
- Bake in the preheated oven for 20-25 minutes or until the burritos are heated through, and the cheese is melted and bubbly.
- Serve warm with extra salsa or toppings of your choice.
