Baked Chicken Burritos

Main Ingredients
  • 2 cups cooked chicken, shredded Great for using leftovers!
  • 1 cup cooked rice White or brown, your choice.
  • 1 cup black beans, drained and rinsed Canned for convenience.
  • 1 cup corn Frozen or canned.
  • 1 cup salsa Mild, medium, or spicy—your choice!
  • 1 teaspoon cumin For a warm aroma.
  • 1 teaspoon chili powder Adds a little kick.
  • 4 large flour tortillas Fresh or slightly warmed.
  • 1 cup shredded cheese Cheddar or Mexican blend, your choice.
  • Olive oil or cooking spray For greasing.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, cooked rice, black beans, corn, salsa, cumin, and chili powder. Mix well until all ingredients are coated in the salsa.
  3. Place a tortilla on a flat surface and spoon a portion of the mixture (about 1/4 of the filling) into the center.
  4. Sprinkle some cheese on top, fold the sides over the filling, and then roll it up tightly to enclose all the flavors.
  5. Repeat with the remaining tortillas and filling.
  6. Place the burritos seam-side down in a greased baking dish.
  7. Brush the tops with olive oil and sprinkle with additional cheese if desired.
Cooking
  1. Bake in the preheated oven for 20-25 minutes or until the burritos are heated through, and the cheese is melted and bubbly.
  2. Serve warm with extra salsa or toppings of your choice.

Tip: Keep an eye on your oven! You want that golden, bubbly top that shouts, 'I’m ready to eat!'
