Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Mix in the sugar, beaten egg, and vanilla extract.
  5. Sprinkle the baking soda and salt over the mixture and stir to combine.
  6. Add the flour and mix until just incorporated. Be careful not to overmix!
  7. Pour the batter into a greased loaf pan.
  8. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

This Banana Bread stores well in the fridge for about a week. For longer storage, slice and freeze between parchment paper. Reheat in the microwave for 15-20 seconds.
