- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, mash the ripe bananas until smooth.
- Stir the melted butter into the mashed bananas.
- Add the sugar, beaten egg, and vanilla extract, and stir until well combined.
- Sprinkle the baking soda and salt over the mixture and mix thoroughly.
- Gently stir in the flour until just incorporated, being careful not to overmix.
- Spoon the batter into each muffin cup, filling them about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Notes
For extra flavor, consider adding cinnamon or nuts in the batter. To keep muffins moist, avoid overmixing.
