Preparation
  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir the melted butter into the mashed bananas.
  4. Add the sugar, beaten egg, and vanilla extract, and stir until well combined.
  5. Sprinkle the baking soda and salt over the mixture and mix thoroughly.
  6. Gently stir in the flour until just incorporated, being careful not to overmix.
  7. Spoon the batter into each muffin cup, filling them about 2/3 full.
  8. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

Notes

For extra flavor, consider adding cinnamon or nuts in the batter. To keep muffins moist, avoid overmixing.
