  • 2 lbs beef chuck, cut into 1-inch cubes You can swap for stew meat or a leaner cut like sirloin.
  • 4 cups beef broth
  • 3 carrots, sliced Add celery or green beans for extra veggies.
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 leaf bay leaf Remove before serving.
  • Salt and pepper to taste
  • 2 tbsp olive oil

Method
 

Cooking Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Add the beef cubes, seasoning with salt and pepper, and brown them on all sides.
  4. Stir in the carrots and potatoes.
  5. Pour in the beef broth and add thyme and bay leaf.
  6. Bring the stew to a boil, then reduce heat to low and simmer for about 1.5 to 2 hours, until beef is tender.
  7. Adjust seasoning if necessary and remove the bay leaf before serving.

Notes

For best flavor, prepare the stew a day in advance and let it sit overnight. Store leftovers in an airtight container for up to 4 days, or freeze in single-serving containers for up to 3 months.
