- Heat olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until translucent.
- Add the beef cubes, seasoning with salt and pepper, and brown them on all sides.
- Stir in the carrots and potatoes.
- Pour in the beef broth and add thyme and bay leaf.
- Bring the stew to a boil, then reduce heat to low and simmer for about 1.5 to 2 hours, until beef is tender.
- Adjust seasoning if necessary and remove the bay leaf before serving.
Notes
