Ingredients

Main Ingredients

  • 1 lb Chicken Breast (diced) Boneless and skinless is preferred for quick cooking.
  • 8 oz Pasta (penne or rotini) Short, twisty pastas hold the sauce best. Whole wheat or gluten-free can be used.
  • 1 cup Buffalo Sauce Use your favorite brand, adjust quantity for heat.
  • 1 cup Chicken Broth Adds savoriness and helps the sauce soak into the pasta.
  • 1 cup Shredded Cheese (cheddar or mozzarella) Extra-melty is recommended.
  • 1 tbsp Olive Oil For browning the chicken.
  • 1 tsp Garlic Powder Adds flavor.
  • Salt and Pepper To taste.
  • Chopped Green Onions or Parsley (for garnish) For a fresh pop of color and flavor.

Instructions

Preparation

  • Heat olive oil in a big pot over medium heat.
  • Add in diced chicken, garlic powder, salt, and pepper; cook until golden and cooked through.
  • Stir in chicken broth and Buffalo sauce; let it simmer.
  • Add uncooked pasta directly into the pot; stir occasionally and cook until al dente.
  • Remove from heat and stir in shredded cheese until melted and creamy.
  • Serve in bowls and top with green onions or parsley.

Notes

Serve hot and cheesy, and consider adding a drizzle of ranch or a side of celery and carrot sticks. For delicious leftovers, cool and store in an airtight container in the fridge for up to 3 days.
