  • 1 cup cooked rice White, brown, or cauliflower rice works well.
  • 1 cup shredded cheese Cheddar, Monterey Jack, or a Mexican blend.
  • 1 piece bell pepper, diced Any color; red or orange adds sweetness.
  • 1 piece onion, diced Yellow or red work well.
  • 1/2 cup sour cream For tanginess; optional.
  • 1 piece avocado Sliced or mashed; optional.
  • 1/2 cup salsa Choose fresh and chunky or mild and smooth.

Instructions

Preparation

  • In a bowl, toss your chicken breasts with olive oil, Cajun seasoning, salt, and pepper. Marinate for at least 30 minutes (or overnight for better flavor).

Cooking

  • Preheat your grill or grill pan to medium heat. Grill chicken breasts for about 7-8 minutes per side until fully cooked. Let them rest for a few minutes before slicing.
  • Heat a splash of olive oil in a skillet over medium heat. Sauté the diced onions and bell peppers until soft and slightly caramelized.

Assembly
