Preparation
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
- In a large bowl, cream the softened butter with the shredded cheese until roughly combined — a few small lumps are fine.
- Stir in flour, baking powder, salt, pepper, garlic powder, and chopped herbs until the mixture looks sandy.
- Add the beaten egg and 2 tablespoons milk. Stir until a soft dough forms. If too dry, add the remaining tablespoon of milk.
- Use a tablespoon cookie scoop or roll 1-inch pieces between your palms to form small balls. Place them about 1 inch apart on the prepared sheet.
- Optional: Brush each ball lightly with egg wash for a golden shine, and sprinkle a pinch of extra chopped herbs or paprika on top.
Baking
- Bake for 12–15 minutes, or until the bites are puffed and the edges are golden brown.
- Let cool 5 minutes on the pan, then transfer to a wire rack. Serve warm.
Notes
For a lower-fat version, swap half the cheddar for part-skim cheese. See variations for gluten-free and vegan options.
