Ingredients
  

For the dough
  • 2 cups shredded sharp cheddar cheese (or a mix: cheddar + mozzarella) Can substitute with a mix of cheeses for different flavors.
  • 1/2 cup unsalted butter, softened Softened for easy mixing.
  • 1 cup all-purpose flour Gluten-free swap available.
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 2 tbsp finely chopped fresh parsley or chives Plus extra for garnish.
  • 1 large egg, beaten Used for the dough.
  • 2–3 tbsp milk (or non‑dairy milk) To bring dough together.
  • 1 egg beaten with 1 tbsp water For egg wash (optional).
Optional mix-ins
  • 1/4 cup finely diced cooked ham or bacon
  • 2 tbsp finely chopped sun‑dried tomatoes
  • 1/4 tsp smoked paprika or cayenne for heat

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, cream the softened butter with the shredded cheese until roughly combined — a few small lumps are fine.
  3. Stir in flour, baking powder, salt, pepper, garlic powder, and chopped herbs until the mixture looks sandy.
  4. Add the beaten egg and 2 tablespoons milk. Stir until a soft dough forms. If too dry, add the remaining tablespoon of milk.
  5. Use a tablespoon cookie scoop or roll 1-inch pieces between your palms to form small balls. Place them about 1 inch apart on the prepared sheet.
  6. Optional: Brush each ball lightly with egg wash for a golden shine, and sprinkle a pinch of extra chopped herbs or paprika on top.
Baking
  1. Bake for 12–15 minutes, or until the bites are puffed and the edges are golden brown.
  2. Let cool 5 minutes on the pan, then transfer to a wire rack. Serve warm.
