Preparation
- Take each piece of pineapple and chicken and wrap it with a slice of bacon.
- Thread the bacon-wrapped pieces onto the skewers, alternating with pieces of red pepper and onion.
Grilling
- Preheat the grill to medium heat.
- In a saucepan, combine pineapple juice, cornstarch, brown sugar, and soy sauce. Bring to a boil, then reduce to a simmer for about 5 minutes until thickened.
- Place the kebabs on the grill and cook for about 5-6 minutes per side, basting with the sauce made.
- Ensure the chicken is cooked through and the bacon is crispy before serving.
Notes
Make sure your chicken pieces are at room temperature before grilling for even cooking. You can prep everything ahead and marinate overnight for more flavor. Store leftovers in an airtight container for 3-4 days.
