  • 1 lb boneless skinless chicken breasts or thighs, sliced into bite-sized pieces Thighs are juicier, breasts cook faster.
  • 12 oz lo mein noodles (or spaghetti in a pinch) Fresh is great, dried works fine.
  • 3-4 tablespoons soy sauce Low-sodium if preferred.
  • 3 cups mixed vegetables (bell peppers, carrots, broccoli) Frozen mixed veggies work too.
  • 2-3 cloves garlic, minced Fresh is best.
  • 1 tablespoon fresh ginger, minced Or 1 tsp ground if needed.
  • 2-3 green onions, sliced thin for garnish
  • 1-2 teaspoons sesame oil for cooking Plus a drizzle at the end if desired.

Method
 

Preparation
  1. Cook the Lo Mein noodles according to package instructions. Drain and set aside.
  2. In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  3. Add chicken pieces and cook, stirring occasionally, until browned and cooked through (about 5–7 minutes).
  4. Add vegetables and stir-fry for several minutes until tender-crisp.
  5. Add the cooked noodles to the skillet, pour soy sauce over everything, and toss until well mixed and heated through.
  6. Garnish with chopped green onions and serve.

Notes

If using dried noodles, don't overcook — you want them tender, not mushy. Prep everything before you start as this dish cooks fast.
