Ingredients
  

Dry Ingredients
  • 1 3/4 cups all-purpose flour Sifted
  • 1 1/2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Added at the end for moisture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour two 9-inch round cake pans or line them with parchment paper.
  3. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Baking
  1. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients and mix until well combined and smooth.
  2. Carefully stir in the boiling water. The batter should be thin.
  3. Pour the batter equally into the prepared pans.
  4. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  5. Remove from the oven and cool the cakes in the pans for 10 minutes before transferring them to wire racks to cool completely.

Notes

Top with your favorite frosting, such as cream cheese, buttercream, or ganache. Leftovers can be kept in an airtight container for up to 3 days at room temperature or a week in the fridge. For a gluten-free option, substitute all-purpose flour with a 1:1 gluten-free baking blend.
