Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease and flour a 9x13 inch baking pan.
  2. In a large mixing bowl, cream together the softened butter and both sugars until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition. Then add the buttermilk and vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  6. Fold in the chopped nuts or fruits if desired.
  7. Pour the batter into the prepared baking pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for a few minutes before slicing and serving.

Notes

Make sure your butter is softened for best blending. Optional ingredients include chocolate chips or dried fruits. If you're out of buttermilk, mix 1 tablespoon of vinegar or lemon juice with milk and let sit for 5 minutes.
