  • 2 cups cooked chicken, shredded or chopped Rotisserie chicken works great!
  • 1 cup celery, finely chopped
  • 1 cup red grapes, halved
  • 1/2 cup walnuts or pecans, roughly chopped Or leave them out if you prefer.
  • 1/2 cup mayonnaise Use Greek yogurt for a lighter version.
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice Optional for brightness.

Preparation
  1. Make sure your chicken is cooked and cooled. Chop your celery, halve the grapes, and chop the nuts if using.
  2. In a large bowl, combine the chopped chicken, celery, grapes, and nuts. Stir slightly to mix.
  3. In a separate small bowl, whisk together mayonnaise, Dijon mustard, salt, and pepper. If using lemon juice, add that too and taste to adjust seasoning.
  4. Pour the dressing over the chicken mixture and gently fold until coated.
  5. Cover the bowl with plastic wrap and let it sit in the fridge for at least 30 minutes for flavors to meld.
  6. Serve on a bed of greens, as a sandwich, or in a wrap.

Notes

This salad keeps well in the fridge for 3 days. For variations, consider adding diced apples or fresh herbs for extra flavors. It is versatile and can cater to various dietary preferences.
