Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Pour the mixture into a greased 9×13 inch casserole dish. Spread the mixture evenly.
Cooking
- Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
- After 30 minutes, remove the foil, sprinkle the cheddar cheese on top, and bake uncovered for an additional 15-20 minutes or until the top is golden and the rice is tender.
- Once finished, remove from the oven, garnish with fresh parsley, and let it cool for a few minutes before serving.
