  • 2 cups cooked chicken, diced or shredded (rotisserie chicken works great) At room temperature.
  • 1 cup uncooked white rice
  • 1 can cream of chicken soup (10.5 oz)
  • 1 cup chicken broth (low sodium recommended)
  • 1 cup frozen mixed vegetables (peas, carrots, corn) Finely chopped if using fresh.
  • 1 cup shredded cheddar cheese Optional for extra creaminess.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, uncooked rice, cream of chicken soup, chicken broth, frozen mixed vegetables, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Pour the mixture into a greased 9×13 inch casserole dish. Spread the mixture evenly.
Cooking
  1. Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
  2. After 30 minutes, remove the foil, sprinkle the cheddar cheese on top, and bake uncovered for an additional 15-20 minutes or until the top is golden and the rice is tender.
  3. Once finished, remove from the oven, garnish with fresh parsley, and let it cool for a few minutes before serving.

Notes

Pro tips: Add herbs for deeper flavor, use heavy cream for creaminess, and let the casserole cool before serving. You can prepare it a day in advance.
