  • 1 cup cream of chicken soup (homemade or store-bought)
  • 1 cup sour cream substitute with Greek yogurt for a lighter version
  • 1 cup shredded cheddar cheese use more if you like it cheesy
  • 1 cup frozen mixed vegetables (thawed) feel free to use any vegetables on hand
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup crushed Ritz crackers for that perfect crunchy topping
  • 1/2 cup melted butter essential for the crunchy topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, mixed vegetables, garlic powder, and onion powder. Stir until well combined.
  3. Season with salt and pepper to taste, adjusting as desired.
  4. Fold in 1 cup of shredded cheddar cheese, mixing until evenly distributed.
  5. Transfer the mixture into a greased 9x13-inch baking dish.
  6. In a separate bowl, mix together the crushed Ritz crackers and melted butter until thoroughly combined.
  7. Sprinkle the cracker mixture evenly over the top of the chicken mixture.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until bubbly and golden brown on top.
  2. Let it cool for at least 5 minutes before serving.

Notes

For added flavor, consider tossing in fresh herbs like parsley or thyme. To thin the mixture, stir in chicken broth. Prep ahead by assembling the casserole the night before and just bake it before serving.
