Main Ingredients
  • 2 cups cooked pasta (your choice)
  • 1 cup shredded cooked chicken (or rotisserie chicken)
  • 1 cup frozen mixed vegetables (peas, carrots, corn) You can use fresh vegetables if preferred.
  • 2 cups cream of mushroom soup Homemade if you’re feeling ambitious.
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or your favorite)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (for topping)
  • Optional: fresh herbs for garnish

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked pasta, shredded chicken, frozen mixed veggies, cream of mushroom soup, sour cream, garlic powder, onion powder, and half of the cheese.
  3. Add salt and pepper to taste and mix everything until well combined.
  4. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly.
  5. Sprinkle the remaining cheese and the breadcrumbs on top.
  6. Place in the oven and bake for about 30-35 minutes, or until bubbly and golden on top.
  7. Once out of the oven, let it sit for about 5 minutes and garnish with fresh herbs if desired.

Notes

Make sure your ingredients are room temperature for even cooking. Chop chicken finely for easier mixing. You can swap the chicken for tofu for a vegetarian option! Feel free to use fresh vegetables if you prefer.
