  • 4 pieces boneless skinless chicken breasts (about 1.5 lb / 700 g)

  • 2 tbsp olive oil or butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream or half-and-half
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar or mozzarella
  • 1/2 cup breadcrumbs or crushed crackers (optional)
  • 2 tbsp chopped fresh parsley or chives for garnish

Method
 

Preparation
  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Pat chicken dry and season both sides with salt and pepper.
  3. In a large skillet over medium-high heat, add oil or butter. Brown the chicken 2–3 minutes per side until golden, then remove chicken and set aside.
Cooking
  1. In the same skillet, lower heat to medium and add garlic. Cook for 30 seconds until fragrant.
  2. Pour in chicken broth and scrape any brown bits from the pan. Stir in cream and cream cheese until smooth. Simmer for 2–3 minutes to thicken.
  3. Return chicken to the skillet or place chicken in the baking dish and pour sauce over it. Sprinkle with cheese and breadcrumbs if using.
  4. Bake uncovered for 18–22 minutes, until chicken reaches 165°F (74°C) and sauce is bubbly. For an extra golden top, broil for 1–2 minutes at the end.
  5. Let rest for 5 minutes, then garnish with parsley and serve.

Notes

Use room-temperature cream cheese for smoother mixing. If the sauce is too thin, simmer a bit longer. Add Dijon mustard or smoked paprika for extra flavor. Try a New Orleans-style spice mix for a spicy twist.
