Ingredients
  

For the chicken and pasta

  • 2 pieces Boneless, skinless chicken breasts Sliced thin for even cooking.
  • 12 ounces Rotini or fusilli pasta Twisted shapes hold the sauce well.

For the sauce

  • 2 tablespoons Olive oil For searing the chicken.
  • 2 tablespoons Butter Adds richness to the sauce.
  • 4 cloves Fresh garlic Minced.
  • 1 cup Chicken broth Essential for the sauce.
  • 1 cup Heavy cream Creates a luscious sauce.
  • 1 cup Grated Parmesan cheese Non-negotiable for flavor.
  • 4 ounces Cream cheese For extra tang and thickness.
  • 1 cup Shredded mozzarella Melts perfectly for creaminess.
  • 1 teaspoon Italian seasoning Adds classic herb flavor.
  • 1/2 teaspoon Red pepper flakes Optional for a hint of heat.
  • to taste Salt & black pepper For seasoning.
  • 1/4 cup Fresh parsley Chopped for garnish.

Instructions
 

Cook the Twisted Pasta

  • Bring a big pot of salted water to a rolling boil. Add the rotini and cook until al dente, then drain, saving a bit of pasta water.

Sear the Chicken

  • Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, black pepper, Italian herbs, and red pepper flakes. Cook for 5-6 minutes until golden and cooked through. Set chicken aside.

Make the Garlic Butter Base

  • In the same skillet, melt 2 tablespoons of butter and gently sauté minced garlic for 1-2 minutes, ensuring it does not brown.

Whip Up the Creamy Sauce

  • Add chicken broth and heavy cream to the skillet. Let it bubble and thicken for a few minutes.

Melt in the Cheeses

  • Reduce heat to low and add Parmesan, cream cheese, and mozzarella, stirring until melted into a glossy sauce. Add reserved pasta water if sauce is too thick.

Bring It All Together

  • Add cooked chicken and drained pasta to the skillet, tossing to coat in the sauce. Simmer for 2-3 minutes to meld flavors.

Serve & Enjoy

  • Serve hot, garnished with chopped parsley and extra Parmesan.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently, adding a splash of liquid if necessary. For variations, consider adding sautéed vegetables or swapping the protein for sausage or shrimp.
