Ingredients
  

Pasta and Base Ingredients
  • 8 oz pasta (spaghetti, penne, or your favorite type) Cook according to package instructions.
  • 1 cup heavy cream (or half-and-half for lighter options) Use at room temperature for optimal texture.
  • 1 cup grated Parmesan cheese Freshly grated is preferred for better melting.
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt Adjust to taste.
  • 1 teaspoon freshly cracked black pepper
  • 1 cup spinach (optional; fresh or frozen) Add for extra nutrition.
  • to taste fresh parsley, chopped For garnish.

Method
 

Cooking the Pasta
  1. In a large pot of salted boiling water, cook the pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving about ½ cup of pasta water.
Making the Sauce
  1. In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
  2. Pour in the heavy cream, stirring continuously. Bring it to a gentle simmer.
  3. Gradually add the grated Parmesan cheese, stirring until melted and the sauce thickens, about 2-3 minutes.
  4. Stir in the salt and cracked black pepper. Add in the spinach if using, letting it wilt for a minute.
Combining and Serving
  1. Add the cooked pasta to the skillet, tossing it gently with the sauce. If the sauce seems too thick, add a little reserved pasta water until it reaches your desired consistency.
  2. Once everything is combined and heated, remove from heat and garnish with fresh parsley.

Notes

Enhance flavor with a pinch of nutmeg. Use fresh ingredients for best taste. Can be made ahead and reheated.
