Method
Cooking the Pasta
- In a large pot of salted boiling water, cook the pasta according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving about ½ cup of pasta water.
Making the Sauce
- In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the heavy cream, stirring continuously. Bring it to a gentle simmer.
- Gradually add the grated Parmesan cheese, stirring until melted and the sauce thickens, about 2-3 minutes.
- Stir in the salt and cracked black pepper. Add in the spinach if using, letting it wilt for a minute.
Combining and Serving
- Add the cooked pasta to the skillet, tossing it gently with the sauce. If the sauce seems too thick, add a little reserved pasta water until it reaches your desired consistency.
- Once everything is combined and heated, remove from heat and garnish with fresh parsley.
Notes
Enhance flavor with a pinch of nutmeg. Use fresh ingredients for best taste. Can be made ahead and reheated.
