  • 2 lbs beef chuck, cut into cubes Use room temperature meat for even cooking.
  • 4 pieces carrots, chopped
  • 4 pieces potatoes, diced
  • 1 piece onion, chopped Finely chop for better flavor infusion.
  • 3 cloves garlic, minced Finely chopped for more flavor.
Liquids and Seasonings
  • 4 cups beef broth Swap for vegetable broth for a lighter version.
  • 1 tablespoon Worcestershire sauce Ensure it's gluten-free if needed.
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons tomato paste

Method
 

Preparation
  1. Place the beef, carrots, potatoes, onion, and garlic in the slow cooker. Make sure everything is evenly distributed.
  2. In a separate bowl, whisk together the beef broth, Worcestershire sauce, thyme, salt, pepper, and tomato paste until combined.
  3. Pour the mixture over the beef and vegetables in the slow cooker. Make sure it covers everything.
Cooking
  1. Cover and cook on low for 7-8 hours or until the beef is tender.
  2. Serve hot and enjoy your meal!

Notes

For a thicker stew, mash some of the potatoes or add a cornstarch slurry at the end. Avoid overcooking; if uncertain, less time is better than too much. Preferring to prep the night before can save time.
