Preparation
- Place the beef, carrots, potatoes, onion, and garlic in the slow cooker. Make sure everything is evenly distributed.
- In a separate bowl, whisk together the beef broth, Worcestershire sauce, thyme, salt, pepper, and tomato paste until combined.
- Pour the mixture over the beef and vegetables in the slow cooker. Make sure it covers everything.
Cooking
- Cover and cook on low for 7-8 hours or until the beef is tender.

Notes
For a thicker stew, mash some of the potatoes or add a cornstarch slurry at the end. Avoid overcooking; if uncertain, less time is better than too much. Preferring to prep the night before can save time.
