Ingredients
  

For the Burgers
  • 2 lb ground beef (80/20 for juiciness)
  • 1 tsp kosher salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder (optional)
  • 1 tbsp Worcestershire sauce (optional)
  • 8 slices cheddar cheese (or American cheese for classic melt)
  • 4 pieces burger buns (brioche or potato rolls recommended)
  • 8 strips bacon (optional, cooked until crispy)
  • Butter or mayo for toasting buns
For the Cheese Fries
  • 2 lb russet potatoes (or frozen fries 2 bags)
  • 3 tbsp vegetable oil (or enough to toss potatoes)
  • Salt and pepper to taste
  • 1.5 cups shredded cheddar cheese (or mix cheddar + Monterey Jack)
  • 2 tbsp chopped chives or green onion (optional)
  • 2 tbsp melted butter or garlic butter (optional for extra flavor)
Condiments & Toppings
  • Lettuce, tomato slices, red onion, pickles
  • Ketchup, mustard, mayo, special sauce (equal parts ketchup + mayo + a squeeze of pickle juice)

Method
 

Preparation
  1. Wash and cut potatoes into fries (about 1/2" sticks) if using fresh. Pat dry.
  2. Season ground beef with salt, pepper, garlic powder, and Worcestershire sauce if using. Chill for 15 minutes for easier shaping.
Form Patties
  1. Make 8 patties (approx. 4 oz / 115 g each) — two per burger. Press a shallow dimple in the center of each patty so they cook evenly.
Preheat
  1. Heat a cast-iron skillet or grill over medium-high heat. Preheat oven to 425°F (220°C) if using oven fries, or heat oil to 325°F for deep frying.
Cook Fries
  1. For oven method, toss cut fries with 2–3 tbsp oil, salt, and pepper. Spread in a single layer on a baking sheet. Bake for 30–40 minutes, flipping halfway until golden and crisp.
  2. For fried method, fry at 325°F for 4–5 minutes until tender but not brown, then drain and rest. Fry again at 375°F for 2–3 minutes until golden and crispy.
  3. For air fryer, cook for 20–25 minutes at 380°F (190°C), shaking the basket halfway.
Cook Patties
  1. Add a little oil to the hot skillet. Cook patties for 3–4 minutes per side for medium.
  2. Add a cheese slice to each patty in the last 30–60 seconds and cover to melt.
Toast Buns & Bacon
  1. Butter or mayo buns and toast face-down in the skillet for 30–60 seconds.
  2. Cook bacon until crispy in a separate pan or in the oven at 400°F (200°C) for 12–15 minutes.
Assemble Burgers
  1. Stack two cheese-topped patties per bun, add bacon (if using), veggies, and your favorite sauces.
Finish Cheese Fries
  1. Pile fries on an oven-safe platter, sprinkle shredded cheese evenly, and broil for 1–2 minutes until melted. Garnish with chives.
Serve
  1. Serve immediately with pickles, extra sauce, and a cold drink. Let burgers rest for 2 minutes before eating to keep them juicy.

Notes

Juiciness hack: Use 80/20 beef and avoid overworking the meat. Make patties larger than your bun as they will shrink while cooking. For perfect cheese melt, add cheese at the end and cover the pan.
