  • 0.5 cup mashed ripe bananas Use overripe bananas for best flavor.
  • 1 tablespoon vanilla extract Pure extract preferred.
  • 1 tablespoon baking powder For raising the cake.
  • 1 teaspoon baking soda Works in combination with the baking powder.

For the Frosting

  • 4 cups powdered sugar For smooth, cloud-like frosting.
  • 0.25 cups heavy cream or milk Cream for richness, milk for lightness.

Toppings and Extras

  • 0.5 cup crushed roasted peanuts For that signature crunch.
  • 0.5 cup candied bacon Optional, can be skipped.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease the cake pans.
  • In a large bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  • Beat in eggs one at a time, followed by the vanilla extract.
  • Pour in buttermilk and gently fold in mashed bananas.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.

Baking

  • Divide the batter into prepared pans and smooth the tops.
  • Bake for 25-30 minutes or until a toothpick inserted comes out clean.
  • Cool completely before frosting.

Frosting and Assembly

  • For the frosting, beat softened butter until creamy, then gradually mix in powdered sugar, cream, and vanilla.
  • Spread frosting on the top of one cake and sprinkle with peanuts (and bacon if using).
  • Place the second cake on top and frost the entire cake.
  • Decorate with chocolate ganache, peanut butter cups, banana slices, and edible gold glitter.

Notes
