  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter, softened Make sure the butter is soft, not melted.
  • 1/2 cup milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp salt

Method
 

Preparation and Mixing
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Combine flour, baking powder, and salt; gradually add to the creamed mixture alternately with the milk.
Baking
  1. Pour batter into a greased 9x13 inch pan.
  2. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow to cool before serving.

Notes

Cut into squares and serve plain, dusted with powdered sugar, or with a dollop of whipped cream. This cake also pairs well with fresh berries or a light glaze. Keep leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. For longer storage, wrap tightly and freeze for up to 2 months; thaw in the fridge before serving.
