  • 2 cups instant white rice Can swap with leftover cooked rice.
  • 1 can 10 oz diced tomatoes with green chilies Adds moisture and flavor.
  • 1 cup black beans Drained and rinsed.
  • 1 cup corn Drained.
  • 1 packet fajita seasoning Provides the flavor kick.
  • 1 cup shredded cheddar cheese Can use low-fat cheese to reduce calories.
  • 1 cup chicken broth Can substitute with vegetable broth for a vegetarian version.
  • to taste Salt and pepper
  • Fresh cilantro for garnish Optional.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, instant rice, diced tomatoes, black beans, corn, fajita seasoning, and chicken broth. Stir until well mixed.
  3. Transfer the mixture to a greased 9x13 inch baking dish.
  4. Top with shredded cheddar cheese.
Baking
  1. Cover with aluminum foil and bake for 30 minutes.
  2. Remove foil and bake for an additional 10–15 minutes until the cheese is bubbly and golden.
  3. Garnish with fresh cilantro before serving.
