- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the onion, garlic, and bell pepper to the skillet. Cook until the vegetables are softened.
- Stir in black beans, diced tomatoes, chili powder, cumin, salt, and pepper. Bring to a simmer.
- Mix in the cooked rice until well combined.
- Optionally, sprinkle cheese on top and let it melt.
- Allow to cool before portioning into freezer-friendly containers.

- When ready to eat, reheat in the oven or microwave.
Notes
