  • 1 lb ground beef or turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (fresh or frozen)
  • 1 cup uncooked rice
  • 2 cups chicken or vegetable broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef or turkey with the onion and garlic until browned.
  3. Stir in the diced tomatoes, black beans, corn, rice, broth, chili powder, cumin, salt, and pepper.
  4. Allow the mixture to boil, then reduce heat and simmer for 5 minutes.
Baking
  1. Pour the mixture into a greased casserole dish and top with cheese if desired.
  2. Cover with foil and bake for 30-35 minutes.
  3. Let it cool before freezing if preparing ahead.
Serving
  1. To serve, simply reheat in the oven until warmed through.

Notes

Use room temperature ingredients for even cooking. Substitutions are easy; swap rice for quinoa or use different beans for variety. This dish is freezer-friendly for up to three months.
