- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef or turkey with onion and garlic until browned.
- Stir in the tomato sauce, diced tomatoes, Italian seasoning, and frozen vegetables. Simmer for 10 minutes.
- Combine the cooked pasta with the meat mixture.
- Transfer to a greased baking dish and top with shredded cheese.
- Bake for 25-30 minutes or until heated through and cheese is bubbly.
- Allow to cool, then freeze individual portions or store in the fridge.
Notes
Use fresh onion and garlic for the best flavor. Don't skip cooling fully before freezing to preserve texture and prevent freezer burn. Variations include swapping beef for turkey or adding bell peppers. For a vegetarian option, use lentils.
