Ingredients

For the Steak

  • 1.5 lbs sirloin or ribeye steak Go for well-marbled steak for the juiciest flavor.
  • 2 tbsp olive oil Perfect for high-heat searing.
  • 3 tbsp butter For that iconic garlic butter sauce; salted or unsalted both work.
  • 4 cloves garlic, minced Always use fresh for the best flavor.

For the Pasta & Sauce

  • 12 oz twisted pasta (rotini or fusilli) The twists catch every bit of sauce.
  • 1.5 cups heavy cream For luxurious, silky Alfredo sauce.
  • 0.5 cup grated Parmesan cheese The saltiness and nutty flavor really pull the sauce together.
  • 1 tbsp Cajun seasoning Use store-bought or mix up your own.
  • 0.5 tsp paprika Adds smoky flavor; smoked paprika is recommended.
  • Salt and black pepper To taste.

For Garnish

  • Chopped parsley or green onions For a fresh, colorful garnish.

Instructions

Cook the Pasta

  • Get a big pot of salted water boiling and cook your twisted pasta according to package directions. Drain and set aside.

Season and Sear the Steak Bites

  • Toss your steak bites with salt, pepper, and paprika. Heat 1 tablespoon olive oil in a large skillet over medium-high and sear steak in batches for 2–3 minutes on each side until golden.

Make the Garlic Butter

  • Lower heat to medium, add butter to the skillet, and stir in minced garlic for about a minute, until fragrant but not browned.

Whip Up the Cajun Alfredo Sauce

  • Pour in heavy cream and sprinkle on the Cajun seasoning. Let it simmer until thickened. Stir in Parmesan cheese until melted into a creamy sauce.

Toss in the Pasta

  • Add your drained pasta to the skillet and toss until noodles are coated in the sauce.

Finish With Steak and Serve

  • Fold the steak bites back into the pan, stir to combine, plate, and sprinkle with parsley or green onion.

Notes

Let steak rest for a few minutes after searing to keep juices locked in. Adjust spice levels in Cajun seasoning to taste. Use fresh Parmesan for best results.
