  • 2 filet mignon or sirloin steaks Go for thicker cuts if you can; filet mignon is a splurge, but sirloin is delicious and more affordable.
  • 1 tbsp olive oil Great for getting that initial sear on the steak.
  • 2 tbsp unsalted butter Don’t skimp here! It brings rich flavor and helps the garlic infuse the steak beautifully.
  • 3 cloves garlic, minced Fresh is best—nothing beats the aroma of garlic sizzling in butter.
  • 1 tsp chili flakes or finely chopped red chilies Adds warmth and color; adjust the spice to your taste.
  • 2 sprigs fresh rosemary (or thyme) Rosemary pairs well with steak, but thyme works if that’s what’s on hand.
  • to taste Salt & freshly cracked black pepper Simple seasonings that let the main ingredients shine.
  • 2 large eggs Farm-fresh always tastes best, especially when the yolks are golden and creamy.
  • 1 tbsp butter or olive oil (for eggs) For extra richness when frying the eggs—personally, I use butter.
  • to taste Salt & pepper For finishing those eggs just right.

Cooking Steps

  • Generously season both sides of your steak medallions with salt and cracked black pepper.
  • Heat the olive oil in a skillet over medium-high heat, then lay the steaks in, listening for that satisfying sizzle.
  • Cook for about 2–3 minutes per side for medium-rare (adjust for your preferred doneness).
  • In the last minute of cooking, drop in the butter, minced garlic, rosemary, and chili flakes. Spoon the garlicky butter over the steak as it melts.
  • Push the steaks to the side of the skillet, or transfer to a plate. Add more butter or olive oil, then crack in your eggs.
  • Let the eggs cook sunny-side up until the whites are set but the yolks remain runny. Sprinkle with salt and pepper.
  • Plate the steaks, top with eggs, and drizzle garlic butter over everything. Finish with extra chili flakes or rosemary if desired.

Notes

Let your steaks sit at room temp for 20 minutes before cooking for even results. Use a cast iron skillet for the best sear and ensure to rest your steak before serving.
