Garlic Butter Steak with Grilled Onions & Parmesan Fries

Ingredients
  

Steak and Marinade
  • 2 pieces ribeye steaks (about 10-12 oz each) or sirloin, ~1 inch thick
  • 1 tbsp fresh thyme leaves or dried thyme
  • 1 tbsp fresh parsley, chopped (plus extra for garnish)
  • 2 tbsp olive oil (for steaks)
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced (or 2 tsp garlic paste)
  • 1 tsp Worcestershire sauce (optional, for steak marinade)
  • 1/2 tsp chili flakes (optional, for heat)
Fries
  • 2 large russet potatoes (or Yukon Gold), cut into fries (about 1/2 inch thick)
  • 2-3 tbsp olive oil (for fries)
  • 1 cup freshly grated Parmesan cheese
  • 1 tsp smoked paprika (optional, for fries)
  • to taste salt and pepper for fries
  • 2 tbsp cornstarch (optional, for extra-crispy fries)
Onions
  • 1 large yellow onion, sliced into 1/2-inch rings
  • 1 tbsp olive oil (for onions)
  • to taste salt Add a splash of balsamic for brightness (optional)
Serving
  • 1 piece lemon wedge, for serving (optional)

Method
 

Preparation of Fries
  1. Preheat the oven to 425°F (220°C). If using an air fryer, preheat to 400°F (200°C).
  2. Wash and cut potatoes into fries. Soak cut potatoes in cold water for 20-30 minutes to remove excess starch for crispier fries; pat dry thoroughly.
  3. Toss fries with 2-3 tbsp olive oil, smoked paprika (if using), salt, and pepper. Optionally, toss with 1-2 tbsp cornstarch for extra crunch. Spread on a baking sheet in a single layer.
  4. Bake fries for 30-40 minutes, flipping once halfway through, until golden and crispy. If air frying, cook 15-20 minutes shaking halfway.
  5. Immediately toss hot fries with grated Parmesan and chopped parsley. Set aside and keep warm.
Cooking Steak
  1. Season steaks generously on both sides with salt and pepper (and Worcestershire sauce if using). Let steaks sit at room temperature for 15 minutes while the fries are finishing.
  2. Heat 2 tbsp olive oil in a heavy skillet over high heat until shimmering. Add steaks and sear for 3–4 minutes without moving for a nice crust. Flip and cook 3–4 minutes more for medium-rare (adjust time for thickness).
  3. Lower heat to medium. Add 4 tbsp butter, minced garlic, and thyme to the skillet. Spoon the melted garlic butter over the steaks for 1–2 minutes until butter foams and garlic is fragrant.
  4. Remove steaks to a cutting board and tent loosely with foil. Rest for 5–10 minutes.
Cooking Onions
  1. In a separate grill pan or skillet, add 1 tbsp olive oil over medium heat and add the sliced onions. Sear/grill for about 8–10 minutes, flipping occasionally, until deeply browned and caramelized at the edges. Season with a pinch of salt and a splash of balsamic (optional).
Serving
  1. Slice steak against the grain, top with grilled onions and a spoonful of the garlic butter from the pan. Serve immediately with hot Parmesan fries and lemon wedges on the side.

Notes

For perfectly even fries, cut potatoes uniformly and don’t overcrowd the pan. Use a hot oven or air fryer. Garlic butter tip: add garlic toward the end to prevent burning. Make-ahead: prepare garlic butter in advance and store in fridge.
