  • 1 cup shredded cheese (cheddar or Mexican blend) Feel free to substitute with dairy-free cheese.
  • 1 cup lettuce, shredded Any type of lettuce can work.
  • 2 tablespoons olive oil For drizzling.

Preparation
  1. In a large bowl, combine the cooked brown rice, black beans, corn, and salsa. Stir until well mixed.
  2. Top the mixture with sliced grilled chicken, diced avocado, shredded cheese, and shredded lettuce.
  3. Drizzle with olive oil and season with salt and pepper to taste.
  4. Serve in bowls and enjoy!

Notes

This meal can be prepped in advance and is great for meal prep. Store for 3-4 days in the fridge or freeze components separately. Substitute ingredients as needed to fit dietary preferences.
