Ingredients

For the Marinade

  • 1/4 cup soy sauce Low-sodium recommended.
  • 2 tbsp lemon juice Fresh-squeezed is a must!
  • 2 tbsp honey Local honey preferred for added flavor.
  • 2 tbsp olive oil Helps keep chicken moist.
  • 3 cloves garlic, minced More garlic equals more flavor.
  • 1 tsp grated fresh ginger Adds warmth and a gentle kick.
  • 1/2 tsp black pepper Freshly ground for the biggest punch.
  • 1/4 tsp red pepper flakes Optional for added heat.

For the Chicken

  • 1.5 lbs boneless, skinless chicken thighs or breasts Thighs recommended for juiciness.

For Garnish

  • to taste lemon slices For serving.
  • to taste chopped green onions For serving.

Instructions

Preparation

  • In a medium bowl, whisk together soy sauce, lemon juice, honey, olive oil, minced garlic, grated ginger, black pepper, and red pepper flakes (if using).
  • Pop your chicken into a large zip-top bag or bowl, pour the marinade over, seal it up, and refrigerate for at least 1 hour, or overnight for best flavor.

Grilling

  • Preheat your grill to medium-high. Remove chicken from the marinade, letting drips fall away.
  • Grill chicken for about 5–6 minutes per side until nicely charred and internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes before slicing.

Serving

  • Arrange grilled chicken on a platter, garnish with lemon slices and green onions, and serve.

Notes

Marinade overnight for best flavor. Pat chicken dry before grilling for better grill marks. Use a meat thermometer to check meat doneness.
