Ingredients
  

For the Steak

  • 2 pieces ribeye or sirloin steaks Ribeye is juicier, but sirloin is also great.
  • 1 tbsp olive oil Helps build the golden crust.
  • 1 tsp salt Kosher salt recommended for deeper flavor.
  • ½ tsp black pepper Freshly cracked is a must.
  • 1 tsp garlic powder
  • 1 tsp paprika Adds spice.
  • 1 tbsp butter For basting.

For the Tomato & Onion Salad

  • 2 medium tomatoes, sliced Ripe heirlooms or vine-ripened are best.
  • ½ piece red onion, thinly sliced Soak in cold water for mild flavor.
  • 1 tbsp olive oil
  • 1 tsp red wine vinegar or lemon juice Either gives a bright pop.
  • Salt & black pepper to taste
  • Fresh parsley or basil (optional) Adds freshness.

For the Crispy Fries

  • 2 large russet potatoes, cut into thin strips Russets crisp up well.
  • 2 tbsp oil Avocado or canola both work.
  • Salt to taste

Instructions
 

Preparing the Fries

  • Toss potato strips with oil and salt on a baking sheet. Arrange in a single layer.
  • Bake at 425°F (220°C) for 30–35 minutes, flipping halfway, or use an air fryer at 400°F for 20 minutes.
  • Scatter sea salt over fries as soon as they're done.

Cooking the Steak

  • Rub steaks with olive oil, then season all sides with salt, pepper, garlic powder, and paprika.
  • Preheat the grill (or a grill pan) over medium-high heat.
  • Sear steaks for 3–4 minutes per side for medium-rare (130°F).
  • In the last minute, add butter to the steaks and baste.
  • Let the steaks rest for 5 minutes before slicing.

Preparing the Salad

  • Combine tomato and onion slices in a bowl.
  • Drizzle with olive oil and vinegar (or lemon).
  • Season with salt, pepper, and toss with fresh herbs.

Serving

  • Pile grilled steak slices onto plates, add crispy fries, and the vibrant tomato & onion salad.
  • Serve with a lemon wedge for brightness.
  • Enjoy while everything is hot and delicious.

Notes

For best results, bring steaks to room temperature before cooking. Pat dry for crusty sear and remember to rest the meat after grilling.
