Ingredients

Main Ingredients

  • 1 lb Beef Heart Sliced thin and trimmed of visible fat, preferably grass-fed.
  • 1 Onion Thinly sliced.
  • 3 cloves Garlic Minced.
  • 2 tbsp Olive Oil For sautéing.

Seasoning and Garnish

  • 1 tbsp Fresh Herbs Parsley and thyme recommended.
  • to taste Salt and Pepper Use freshly ground black pepper for best flavor.
  • 1/4 cup Red Wine or Broth Totally optional, enhances flavor.

Instructions

Preparation

  • Pat the beef heart dry with a paper towel, then trim off any fat or connective tissue. Slice it into bite-sized strips.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add onions and cook until translucent, about 3-4 minutes. Stir in the garlic and sauté another minute.
  • Add the sliced beef heart to the skillet. Cook for 2-3 minutes per side, just until browned.
  • Pour in a splash of red wine or broth, scraping up any browned bits from the pan. Let everything simmer together for another 3-5 minutes.

Finishing Touches

  • Toss with fresh herbs, season generously with salt and pepper, and serve hot.

Notes

Heart heart is best served over mashed potatoes or noodles. Leftovers taste even better the next day. Store in an airtight container for up to 3 days or freeze for longer storage.
