  • 2 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 3 pieces carrots, sliced
  • 3 pieces potatoes, diced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large bread bowls
  • Fresh parsley, for garnish

Method
 

Cooking the Stew
  1. In a large pot, heat some oil over medium heat. Add the beef and brown on all sides (about 6-8 minutes).
  2. Stir in the onions and garlic; cook until softened (about 3 minutes).
  3. Toss in the carrots, potatoes, tomato paste, thyme, salt, and pepper. Mix well to combine all the flavors!
  4. Pour in the beef broth and bring the mixture to a gentle simmer.
  5. Cover and cook on low for 1.5 to 2 hours, or until the beef is fork-tender.
Preparation of Bread Bowls
  1. While the stew is cooking, slice the top off each bread roll and hollow them out gently.
  2. Once the stew is done, ladle it generously into the bread bowls.
  3. Top with fresh parsley and serve immediately!

Notes

For best results, use room temperature meat and finely chop your vegetables to ensure uniform cooking. Consider prepping vegetables ahead of time for convenience.
