Preparation
- Preheat your oven to 350°F (175°C). Grease a square 9-inch baking dish or similar-sized casserole dish to prevent the pudding from sticking.
- In a large mixing bowl, combine the flour, granulated sugar, 2 tablespoons of cocoa powder, baking powder, and salt. Mix well to ensure an even distribution of ingredients.
- In a separate bowl, whisk together the milk, vegetable oil, and vanilla extract until well combined.
- Gradually add the wet mixture to the dry ingredients, mixing until just combined. Be careful not to overmix.
Topping and Baking
- In a small bowl, mix together the brown sugar and 1/4 cup cocoa powder. Evenly sprinkle this mixture over the batter in the baking dish.
- Carefully pour the hot water over the top of the batter and sugar mixture. Do not stir—this step creates the magic sauce!
- Place the baking dish into the preheated oven and bake for about 40-45 minutes, or until the cake top is set and a toothpick inserted comes out mostly clean.
- Once baked, remove from the oven and let it sit for a few minutes before serving.
- Ladle portions into bowls and enjoy warm, preferably topped with a scoop of vanilla ice cream or whipped cream.
Notes
