Main Ingredients
  • 8 pieces Chicken Tenders They cook quickly and get nice and crispy.
  • 5-6 cups mashed potatoes Homemade is great, but store-bought works just as well!
  • 1 cup corn Adds a sweet crunch and can use frozen or canned.
  • 1 cup brown gravy Or use a packet.
  • 1 cup cheddar cheese Freshly grated; melts beautifully for that gooey topping.

Method
 

Preparation
  1. Preheat the oven to 400 degrees F.
  2. Let the frozen chicken tenders sit at room temperature for about 5 minutes.
  3. Spread the mashed potatoes in the bottom of your casserole dish.
  4. Layer on the corn evenly across the mashed potatoes.
  5. Sprinkle cheese over the corn.
  6. Carefully slice the chicken strips and place them on top.
Baking
  1. Bake in the preheated oven for about 20 minutes if using frozen chicken tenders, or 15 minutes for homemade.
  2. While that’s baking, whip up your brown gravy on the stovetop.
  3. Once it’s done, drizzle with your desired amount of gravy.
  4. Serve hot and enjoy!

Notes

Warm mashed potatoes beforehand. Let the chicken rest for a minute before slicing. You can add more veggies like peas or broccoli.
