Ingredients
  

For the Meatloaf Mixture
  • 1 lb ground beef Can substitute ground turkey or a mix of beef and turkey.
  • 1/2 cup breadcrumbs Can use half breadcrumbs and half rolled oats.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon salt Reduce for lower sodium.
  • 1/2 teaspoon black pepper
For Assembly
  • 1 cup tomato sauce Can use low-sodium tomato sauce.
  • 1/2 cup shredded cheddar cheese Can substitute with mozzarella.
  • 12 oz pasta shells Cook according to package instructions.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine ground beef, breadcrumbs, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  3. Form the mixture into meatballs or a loaf shape.
  4. Cook the shells according to package instructions until al dente, then drain.
Assembly
  1. In a baking dish, spread a layer of tomato sauce, then add a layer of cooked pasta shells.
  2. Place the meatballs or loaf on top of the pasta, cover with more tomato sauce, and sprinkle shredded cheddar cheese on top.
  3. Bake for 30-35 minutes or until the cheese is bubbly and golden.
  4. Let cool for a few minutes before serving.

Notes

This casserole reheats beautifully and freezes well. Incorporating extra diced vegetables into the meat mixture boosts nutritional value without adding many calories.
