Preparation
- Preheat the oven to 425°F (220°C). Line a large baking sheet with foil and set a wire rack on top.
- Pat wings very dry with paper towels.
- In a large bowl, toss wings with olive oil, baking powder, salt, pepper, smoked paprika, garlic powder, onion powder, and cayenne (if using).
- Arrange wings on the wire rack in a single layer, skin side up.
Cooking
- Bake at 425°F (220°C) for 35–45 minutes, flipping once halfway through.
- Meanwhile, heat your BBQ sauce. For a thicker glaze, simmer sauce and honey or brown sugar in a small saucepan for 10–15 minutes.
- When wings are done, toss hot wings in the warm BBQ sauce until evenly coated.
- For extra caramelized edges, place coated wings under the broiler for 1–3 minutes. Watch closely.
Notes
For extra crispy skin, refrigerate wings uncovered for 1–6 hours before baking to dry them out.
