Ingredients
  

For the Patty Filling
  • 2 cups powdered sugar The foundation for the smooth center.
  • 2 tablespoons unsweetened cocoa powder Adds chocolate flavor to the filling.
  • 2 cups shredded coconut Either sweetened or unsweetened coconut works.
  • 1/2 cup sweetened condensed milk Binds everything together and adds sweetness.
  • 1/2 teaspoon peppermint extract Essential for the mint flavor.
For the Chocolate Coating
  • 1 cup dark chocolate chips Use good quality for the best snap.
  • 1 tablespoon coconut oil Thins the chocolate for smooth dipping.

Method
 

Preparation
  1. In a mixing bowl, combine the powdered sugar, cocoa powder, shredded coconut, sweetened condensed milk, and peppermint extract. Mix until combined into a sticky dough.
  2. Use a small scoop or your hands to shape the mixture into small rounds or discs about 1½ inches across. Place on a parchment-lined baking sheet.
  3. Freeze the patties for about 30 minutes or until very firm.
Chocolate Dipping
  1. Melt the dark chocolate chips with the coconut oil in a microwave-safe bowl in 20–30 second bursts, stirring after each until smooth.
  2. Dip each frozen patty into the melted chocolate, ensuring it is fully coated, then lift and tap to remove excess chocolate.
  3. Return the chocolate-coated patties to the parchment-lined tray and refrigerate until the chocolate is firm, about 15–30 minutes.
Serving
  1. Serve chilled from the fridge to enjoy the best texture.

Notes

For a brighter mint flavor, consider adding an extra 1/4 teaspoon of peppermint extract. For a dairy-free option, you can substitute the sweetened condensed milk with thickened coconut cream and use dairy-free chocolate.
