  • 1 lb lean ground beef Use 90% lean or higher for healthier option.
  • 1 medium yellow onion, diced
  • 1 cup pepperoni slices Can substitute with turkey pepperoni for a healthier option.
  • 1 can enchilada sauce
  • 1 cup shredded mozzarella cheese Can use part-skim for lower calories.
  • 1 cup shredded cheddar cheese Can use part-skim for lower calories.
  • 8 pieces flour tortillas Can substitute for whole wheat or low-carb tortillas.
  • Salt and pepper to taste
  • 1 tablespoon olive oil for cooking Use extra virgin for more flavor.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add diced onion and cook until softened.
  3. Add ground beef, season with salt and pepper, and cook until browned. Stir in pepperoni and enchilada sauce, cooking for a few more minutes.
Assembly
  1. In a baking dish, spread a thin layer of enchilada sauce.
  2. Take a flour tortilla, fill with the beef mixture, top with mozzarella and cheddar, roll it up, and place seam-side down in the baking dish. Repeat with the remaining tortillas.
  3. Pour more enchilada sauce over the top, then sprinkle remaining cheese over it.
Baking
  1. Bake in the preheated oven for 20–25 minutes until bubbly and cheese is melted.
  2. Let cool for a few minutes before serving.

Notes

Serve with a simple salad for a complete meal. Can be doubled for leftovers and reheats well.
