Preparation
- Preheat the oven to 350°F (175°C).
- In a skillet, heat olive oil over medium heat. Add diced onion and cook until softened.
- Add ground beef, season with salt and pepper, and cook until browned. Stir in pepperoni and enchilada sauce, cooking for a few more minutes.
Assembly
- In a baking dish, spread a thin layer of enchilada sauce.
- Take a flour tortilla, fill with the beef mixture, top with mozzarella and cheddar, roll it up, and place seam-side down in the baking dish. Repeat with the remaining tortillas.
- Pour more enchilada sauce over the top, then sprinkle remaining cheese over it.
Baking
- Bake in the preheated oven for 20–25 minutes until bubbly and cheese is melted.
- Let cool for a few minutes before serving.
Notes
Serve with a simple salad for a complete meal. Can be doubled for leftovers and reheats well.
