- In a large pot, heat over medium heat and toss in your chopped onions and minced garlic. Cook until they’re translucent and fragrant, about 3-5 minutes.
- Stir in the diced potatoes, carrots, and optional sausage. Let them mingle for a minute!
- Pour in the broth and bring the mixture to a boil.
- Reduce the heat and let it simmer for about 15-20 minutes or until the veggies are tender.
- Blend the soup to your desired consistency using an immersion blender or a regular blender.
- Stir in the heavy cream until well combined, and season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
Pro Tips: If using a regular blender, don’t overfill it. Adjust thickness by blending more or less.
